{"id":339,"date":"2014-12-04T23:16:53","date_gmt":"2014-12-05T04:16:53","guid":{"rendered":"http:\/\/brewitright.com\/wordpress\/?p=339"},"modified":"2014-12-04T23:42:37","modified_gmt":"2014-12-05T04:42:37","slug":"ringwood-old-thumper","status":"publish","type":"post","link":"http:\/\/brewitright.com\/wordpress\/2014\/12\/04\/ringwood-old-thumper\/","title":{"rendered":"Ringwood Old Thumper"},"content":{"rendered":"<p><a href=\"http:\/\/www.ringwoodbrewery.co.uk\/ales#old-thumper\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"http:\/\/www.ringwoodbrewery.co.uk\/public\/uploads\/ourales\/18\/cropped-oldthumper.png\" alt=\"\" width=\"300\" height=\"412\" \/><\/a>Continuing the fine tradition of Using Stuff Up, we have another British clone.\u00a0 Oddly we&#8217;re almost all done with the bag Maris Otter we bought in April, which means we&#8217;re about 6 months ahead of the last bag we bought.\u00a0 Keeps things fresh.<\/p>\n<p>This one is another clone from Graham Wheeler&#8217;s <a href=\"http:\/\/www.amazon.com\/gp\/product\/1852492589\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1852492589&amp;linkCode=as2&amp;tag=britri-20&amp;linkId=STK46AIFAOUPLHY7\">Brew Your Own British Real Ale<\/a> (3rd Edition).\u00a0 We really wanted to do something else from Pattinson&#8217;s <a href=\"http:\/\/www.amazon.com\/gp\/product\/1592538827\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1592538827&amp;linkCode=as2&amp;tag=britri-20&amp;linkId=SJWAG2RCKFVLWZL2\">The Homebrewer&#8217;s Guide to Vintage Beer<\/a> but almost everything in it seems to require <a href=\"http:\/\/barclayperkins.blogspot.com\/2009\/06\/refined-sugar-vs-invert-sugar.html\">invert sugar<\/a> and we didn&#8217;t have 4 free hours to make any.\u00a0 No fear though, we&#8217;ll do that soon.<\/p>\n<p>Wheeler lists Old Thumper at 5.7% ABV, while <a href=\"http:\/\/www.ringwoodbrewery.co.uk\/ales#old-thumper\">Ringwood itself<\/a> gives 5.1% ABV.\u00a0 Old Thumper might have previously had a higher ABV, or possibly the bottled version has a higher ABV than the cask version which is sometimes the case.\u00a0 No clue about that, but we&#8217;ll take the high end.<\/p>\n<p><strong>The Recipe<\/strong><\/p>\n<pre>Name: Ringwood Old Thumper\r\nBatch size: 5 gallons\r\nExpected OG: 1.056 (75% efficiency)\r\nExpected FG: 1.013\r\nExpected IBU: 39\r\nMash: 90m @ 151\u00b0F\r\n\r\n 9.4 lbs Munton's Maris Otter\r\n  10 oz  Briess Torrefied Wheat\r\n   7 oz  Munton's Crystal 60L\r\n   1 oz  UK Chocolate 350L\r\n\r\n   1 oz  Challenger    8.7%AA @ 90m\r\n 0.4 oz  Kent Goldings 6.5%AA @ 10m\r\n 0.6 oz  Kent Goldings 6.5%AA @  0m\r\n\r\n1 pack Wyeast 1469 West Yorkshire\r\n<\/pre>\n<p>Our recipe has higher IBU than Wheeler specifies due to the alpha acid of the hops we had.\u00a0 We&#8217;re also using Wyeast 1469 West Yorkshire yeast, a strain we&#8217;ve had great luck with in British ales.<\/p>\n<p><strong>The Brew<\/strong><\/p>\n<p>Not much interesting here.\u00a0 We hit our pH target (5.35) using carbon filtered city water with no lactic acid required.\u00a0 Mash-in was a bit cool at 142\u00b0F but we fixed that in due time.\u00a0 The sparge yielded 8 gallons at 10\u00b0 Plato (1.040) which we boiled vigorously for 105 minutes, to 5 gallons @ 15\u00b0 Plato (1.060).\u00a0 Right on target.\u00a0 Chill, oxygenate, pitch, and done.<\/p>\n<p>Fermentation was very active, even with Fermcap S in the fermenter.\u00a0 We lost a pint or so to blowoff through the airlock.\u00a0 Upon kegging two weeks later, it landed at 1.012 for 6.3% ABV.<\/p>\n<p>And it tastes great; there&#8217;s a new-ish local fish and chips place, and what better to drink with fine cod\/haddock\/walleye than a fine real ale?\u00a0 Cheers!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Continuing the fine tradition of Using Stuff Up, we have another British clone.\u00a0 Oddly we&#8217;re almost all done with the bag Maris Otter we bought in April, which means we&#8217;re about 6 months ahead of the last bag we bought.\u00a0 Keeps things fresh.
