required.\u00a0 Digging deep into Graham Wheeler&#8217;s <a href=\"https:\/\/shop.camra.org.uk\/product.php?id_product=25\">Brew Your Own British Real Ale<\/a> we came up with Big Lamp Bitter.\u00a0 Here we&#8217;ve adjusted the recipe for US\/Standard measurements and added a few IBUs so that we don&#8217;t have any partial ounces of hops left-over.<\/p>\n<pre>Name: Big Lamp Bitter\r\nBatch size: 5 gallons\r\nExpected OG: 1.042\r\nExpected FG: 1.010\r\nExpected IBU: 30\r\nMash: 90m @ 152\u00b0F (Brew-in-a-bag)\r\n\r\n  7.1 lbs Muntons Maris Otter 3L\r\n    6 oz  Muntons Medium Crystal 60L\r\n\r\n1 oz Goldings      5.5% AA @ 60m\r\nWhirlfloc + yeast nutrient @ 10m\r\n1 oz Fuggles       5.7% AA @  5m\r\n\r\n1 pack Safale S-05 Yeast<\/pre>\n<p>OK, so it&#8217;s not really a traditional bitter since we&#8217;re using S-05 yeast instead of a real British variety.\u00a0 And we&#8217;re only hopping for 60 minutes while Wheeler adds the hops at the start of the 90 minute boil for all his recipes.\u00a0 But whatever.<\/p>\n<p><strong>The Brew<\/strong><\/p>\n<p>This time we decided to use the Brew-In-A-Bag (BIAB) method instead of the traditional 3-vessel setup, mostly to see if we&#8217;d hit the numbers and if the brew day would be shorter.\u00a0 If you&#8217;re not familiar with BIAB, here&#8217;s the basic process:<\/p>\n<ul>\n<li>fill your kettle with the full pre-boil volume of water, plus whatever the grain will absorb<\/li>\n<li>heat all the water to the strike temperature (be sure to use a calculator for this, since there&#8217;s more water the temperature will drop less than regular methods after adding the grain)<\/li>\n<li>secure your bag in the kettle, then mill your grain and dump it into the bag<\/li>\n<li>stir the grain in the bag to break up dough-balls<\/li>\n<li>proceed with your mash<\/li>\n<li>pull out the grain bag, optionally rinse to extract more sugars, and squeeze to get as much liquid as you can<\/li>\n<li>proceed with your boil<\/li>\n<\/ul>\n<p>In theory BIAB should take less time and less equipment, and for the most part that&#8217;s correct.\u00a0 We&#8217;ve actually done BIAB on this system before we finished building the HLT and the mash tun, so we have some data to go by.<\/p>\n<p><a href=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/blb-mash.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-257\" src=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/blb-mash.jpg\" alt=\"blb-mash\" width=\"500\" height=\"375\" srcset=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/blb-mash.jpg 800w, http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/blb-mash-300x225.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>We heated almost 9 gallons of strike water to 155\u00b0F and added the grain, which dropped the mash temperature to the expected 152\u00b0F and a pH of 5.6, which we adjusted to 5.4 with lactic acid.\u00a0 A half-hour into the mash the wort was 6\u00b0P.\u00a0 But now it was dinner time so we let the mash recirculate for a total of 2 hours.\u00a0 Upon return, after squeezing all the liquid we could out of the grain, we ended up with 8.5 gallons of 6.5\u00b0P (1.026) wort, while we actually wanted 8 gallons of 1.028 wort instead.\u00a0 Boil-off time!<\/p>\n<p>After 30 minutes of boil-off, we had 8 gallons of 7\u00b0P wort (1.028) and started the real boil.\u00a0 Uneventful.\u00a0 90 minutes later we had 5 gallons of 1.040 wort and an excellent hot break, all of which we dumped into the fermenter.<\/p>\n<p>Did BIAB save us time?\u00a0 Yes, some, but not a lot.\u00a0 We keep trying to save time and never quite do it, so maybe the problem is us&#8230;\u00a0 Did we hit the numbers?\u00a0 No, not really, but we weren&#8217;t that far off.\u00a0 Had we mashed with less water, and boiled less vigorously, we may have gotten closer to the expected gravities.\u00a0 But did BIAB make cleanup easier?\u00a0 Definitely; only one kettle to scrub!<\/p>\n<p><strong>The Beer<\/strong><\/p>\n<p><a href=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/big-lamp-bitter.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-255\" src=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/big-lamp-bitter.jpg\" alt=\"big-lamp-bitter\" width=\"400\" height=\"545\" srcset=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/big-lamp-bitter.jpg 500w, http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2014\/06\/big-lamp-bitter-220x300.jpg 220w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/a>10 days later, after fermenting around 65\u00b0F, we transferred the 1.009 beer to a keg.\u00a0 A week after that we had a light refreshing beer with a sessionable ABV of about 4%.\u00a0 It&#8217;s not very complex (obviously) but it&#8217;s a great summer beer.\u00a0 We&#8217;d brew this again, which means we Brewed It
