{"id":19,"date":"2013-09-05T14:19:14","date_gmt":"2013-09-05T19:19:14","guid":{"rendered":"http:\/\/brewitright.com\/wordpress\/?p=19"},"modified":"2013-09-05T17:18:21","modified_gmt":"2013-09-05T22:18:21","slug":"british-series-timothy-taylor-best-bitter","status":"publish","type":"post","link":"http:\/\/brewitright.com\/wordpress\/2013\/09\/05\/british-series-timothy-taylor-best-bitter\/","title":{"rendered":"British Series: Timothy Taylor Best Bitter"},"content":{"rendered":"<p>Ever since a three-week vacation in the UK a couple years ago, I&#8217;ve had a thing for researching and brewing British ales.\u00a0 While there I picked up copies of Dave Line&#8217;s <a href=\"http:\/\/www.amazon.com\/Brewing-Beers-Those-Amateur-Winemaker\/dp\/1854861255\/ref=sr_1_1?ie=UTF8&amp;qid=1378331161&amp;sr=8-1&amp;keywords=brewing+beers+like+those+you+buy\">Brewing Beers Like Those You Buy<\/a> and Graham Wheeler&#8217;s <a href=\"http:\/\/www.amazon.com\/Brew-Your-Own-British-Real\/dp\/1852492589\/ref=sr_1_1?ie=UTF8&amp;qid=1378331225&amp;sr=8-1&amp;keywords=brew+your+own+british+real+ale\">Brew Your Own British Real Ale<\/a>.\u00a0 Having had quite a few of these beers on cask in various pubs made the whole experience that much more awesome.<\/p>\n<p>Since I have all the ingredients (except the yeast) we&#8217;ll brew Timothy Taylor Best Bitter, since <a href=\"http:\/\/www.timothytaylor.co.uk\/NewsItem.aspx?id=189\">renamed Boltmaker<\/a>.\u00a0 A few notes:<\/p>\n<ul>\n<li>Malt: Wheeler simply states &#8220;pale malt&#8221; but a bit of research indicates that Timothy Taylor may use Golden Promise, at least for Landlord.\u00a0 There are few references to Best Bitter\/Boltmaker, and none state the specific malt used.\u00a0 In any case, I have Maris Otter on-hand, so that&#8217;s what I&#8217;m using.\u00a0 On the other hand, I only have Crystal 60L while Wheeler recommends 120L &#8211; 150L, so this brew will be a bit lighter in color and a bit less toffee flavored.<\/li>\n<li>Hops: Wheeler refers only to &#8220;Golding&#8221; hops, and does not specifically mention any particular variety such as East Kent or Whitbread.\u00a0 I have some generic UK Goldings at 5.5% AA, so in the pot they go.<\/li>\n<li>Yeast: It appears that Wyeast 1469 West Yorkshire is the actual yeast Timothy Taylor uses, based on quick research.\u00a0 Quick trip to the store and we&#8217;ve got it.<\/li>\n<\/ul>\n<p><strong>The Recipe<\/strong><\/p>\n<pre>Expected OG: 1.039\r\nExpected FG: 1.009\r\nMash: 90m @ 151F\r\n\r\n6.68 lbs (3030g) Muntons Maris Otter\r\n5.7 oz (160g) Muntons Light Crystal 60L\r\n0.9 oz (26g) British Black Malt\r\n\r\n1.23oz (35g) UK Goldings @ 90m\r\n0.42oz (12g) UK Goldings @ 10m\r\nWhirlfloc @ 10m\r\n\r\nWyeast 1469 West Yorkshire Ale<\/pre>\n<p><strong>The Process<\/strong><\/p>\n<p>I hit strike temperature exactly but since there&#8217;s a couple degrees difference between the MLT and the HLT due to the pumps and coil, the temp dropped to 148 for the first few minutes.\u00a0 I brought it back up to 151F about 10 minutes later and adjusted to pH 5.25 with some lactic acid.<\/p>\n<figure id=\"attachment_27\" aria-describedby=\"caption-attachment-27\" style=\"width: 253px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2013\/09\/ttbestbittermill.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-27  \" style=\"border: 1px solid black;\" alt=\"ttbestbittermill\" src=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2013\/09\/ttbestbittermill-253x300.jpg\" width=\"253\" height=\"300\" srcset=\"http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2013\/09\/ttbestbittermill-253x300.jpg 253w, http:\/\/brewitright.com\/wordpress\/wp-content\/uploads\/2013\/09\/ttbestbittermill.jpg 400w\" sizes=\"(max-width: 253px) 100vw, 253px\" \/><\/a><figcaption id=\"caption-attachment-27\" class=\"wp-caption-text\">Mill me some Best Bitter<\/figcaption><\/figure>\n<p>After a 90 minute mash and mashout at 168F my first runnings were about 1.040.\u00a0 Because I was lazy I ended up with 8.5 gallons @ 1.025, while my pre-boil target was 7.5 gallons @ 1.030, so boil down we go.\u00a0 40 minutes later we&#8217;re at 7.5 gallons @ 1.030, so I toss in the first batch of Goldings, and start the clock on the boil.\u00a0 11:00 o&#8217;clock rolls around and the chilled wort is kegged and the yeast added, ending up with 5.5 gallons @ 1.040.\u00a0 Not too shabby.<\/p>\n<p>Cleanup lasts longer, unfortunately.\u00a0 I really need to find ways to make brew days shorter, though my main breaker tripping while heating the strike water didn&#8217;t help.<\/p>\n<p>This morning the airlock is bubbling every 10 seconds or so, and the chamber is set to 66F which is on the low side of the Wyeast recommended range of 64F to 71F.\u00a0 I prefer to ferment low to reduce esters.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ever since a three-week vacation in the UK a couple years ago, I&#8217;ve had a thing for researching and brewing British ales.\u00a0 While there I picked up copies of Dave Line&#8217;s Brewing Beers Like Those You Buy and Graham Wheeler&#8217;s Brew Your Own British Real Ale.\u00a0 Having had quite a few of these beers on &hellip;
